Abstract

The contents of piperine in black pepper was determined. The contents of piperine in all investigated samples was on the standard level, more then 4 % of dry basis. Statistically important origin influence on piperine contents is also reported. The lowest piperine contents in 2006 was 5,85%, and the highest amounted to 9,53%. In 2007 the piperine contents ranged from 5,77% to 7,19%.
